If you've ever wanted to eat boba for breakfast, well, now you can! Since I'm craving boba tea 24/7, I obviously had to find a way to eat is as a meal.😝 These crepes are super simple, super tasty, and nutritious enough to eat for breakfast.
It's got fiber from the whole wheat flour, protein from plant milk (although varying depending on the type of milk you use), plus more if you choose to serve with yogurt. At the same time, they're light, chewy, and so delicious!

ingredients in vegan boba crepes
- nondairy milk: crepes are a lot thinner than pancakes, so the milk to flour ratio is a lot higher. The type of milk does not make a significant difference in the outcome, so feel free to use whatever kind you have on hand. 🙂
- oil: it's a very small amount, but really helps the texture so it's moist and not gummy.
- maple syrup: just a bit to help sweeten the pancakes. You can replace this with sugar, honey, or another syrup!
- white whole wheat flour: to add a bit more nutritional value without altering the texture.
- white flour: this helps the texture from tasting too wheat-y! However, you're free to substitute this with more whole wheat flour for more fiber, just keep in mind that it will have a heavier texture.
- dry tapioca/boba pearls: you can actually order these online and they only take a few minutes to cook! I love having them on hand to drink boba whenever I feel like it, and they pair perfectly with these crepes.
- sugar: to mix with the boba and create the signature simple syrup that comes with it.
how to make crepes with boba
- In a blender, blend the milk, oil, syrup, vanilla, baking powder, salt, and flour until smooth.
- Heat a small/medium nonstick pan to medium heat and lightly coat with oil. Scoop about 2 tablespoons of batter onto the pan, spread it out, and cook for a minute on each side. Repeat until all the batter is used.
- Boil the tapioca pearls according to package directions. Turn off the heat, drain, and place on the stove. Add the sugar and mix just until it melts.
- Serve the crepes with the boba, and dairy free yogurt or cream, if desired. Enjoy!
