This healthy chocolate chip cookie skillet is easy to make and so delicious. It's basically a soft, gooey, giant chocolate chip cookie that's great for sharing with friends and family. It's also completely vegan and gluten free!
Ok, I know it doesn't look right to call this a cookie skillet when it's in a cake pan. But in my defense, the recipe will still be the same whether you have a skillet or not! Even if the aesthetic is a little off, I can promise you that this recipe will not disappoint.
It's easy, gooey, soft, moist, nutritious, and so flipping delicious. There's also no dairy, eggs, or gluten and takes just about 30 minutes to prepare. A win from all angles!
This recipe is great for sharing with friends and family, but if I'm being completely honest I ate this whole thing by myself. Works either way.🤣

- flaxseed meal: this ingredient is crucial for the texture. Since this recipe has no eggs, the cookie holds together with a flax egg. A flax egg is comprised of just flaxseed meal and water, set to gel for 5-10 minutes--it's super simple, and prevents the recipe from crumbling apart.
- unsweetened applesauce: makes this cookie skillet moist but still light!
- nut butter: this is key for achieving the soft and gooey texture, since it's creamy and high and healthy fats. I used almond butter, but cashew butter would also be a great alternative!
- maple syrup and sugar: these both act as sweeteners, and it is important to use both a liquid and granulated sweetener! You can substitute maple syrup with honey, and the sugar can be cane or coconut sugar, or whatever granulated sweetener you prefer.
- oil: only 2 tablespoons in this recipe, but it does help significantly for a moist texture.
- oat flour: oat flour is just blended oats but helps in so many ways. It's gluten free, gives a nice chew to the cookie, and has plenty of fiber to keep this nutritious and filling.
- almond flour: this is great as another gluten free flour, made purely from almonds. This, again, helps with the moisture and texture of the cookie skillet.
how to make a vegan & gluten free cookie skillet
- Preheat oven to 350 degrees Fahrenheit and grease a skillet or 8" cake pan. Set aside.
- In a large bowl, mix the flaxseed meal and water and sit for 5-10 minutes until it gels.
- Mix in the wet ingredients: applesauce, nut butter, maple syrup, oil, sugar, milk, and vanilla.
- Fold in the dry ingredients: oat flour, almond flour, baking soda, baking powder, salt, and chocolate chips. Mix until combined.
- Transfer to the prepared pan or skillet and bake for 20 minutes. Serve with dairy free ice cream and enjoy!
