I think the right question is: is there any better combo than peanut butter + banana? Probably peanut butter + chocolate, but that's beside the point😂
My point is, these pancakes are super fluffy and delicious, and they're gluten free and added-sugar free! Perfect for both slow and busy mornings! You can also meal prep these; just cook them in advance and refrigerate until you want to eat.

How to Make Flourless Pancakes Fluffy
It's easier than you think! Most of the ingredients are pretty classic in pancakes, but there is one difference that we'll get to in a second.
The first thing is the eggs. While most pancake recipes do have eggs, it is important to make sure that you whip them in this recipe. It'll only take an extra minute, but the end result gives the pancakes more structured air bubbles.
To save you some time, and to save your arms, I use an electric hand mixer. It can whip up the eggs so much faster and easier! This is the brand I've been using and loving for years. It also comes with an immersion blender and mini food processor attachments, which I use all the time. It's such a great deal for the value it provides!
Next we have the peanut butter. Not only does it add a delicious flavor and richness, it also provides structure so we don't need any flour! You can also use almond butter or cashew butter if you prefer.
It is important to note that there are so many varieties of peanut butter out there, so you really want to make sure yours only has 1-2 ingredients: peanuts and salt. Added oils, sugars, and preservatives will ruin the texture and taste. This is my favorite brand!
And finally, the apple cider vinegar! This is so important, and you can't replace it with anything else. The acidity reacts with the basic baking soda to create air bubbles, making super fluffy pancakes!
One last thing I want to mention is the banana. Like the peanut butter, it does more than add flavor. It also adds moisture, and natural sweetness, so there is no added sugar in this recipe! You can add some of course, but I don't find it necessary at all 😉

Healthy Flourless Peanut Butter Banana Pancakes (Gluten Free, No Added Sugar)
Ingredients
- 1 cup natural peanut butter
- 1 tablespoon apple cider vinegar do not omit!
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 3 large eggs
- 2 medium ripe bananas
- 2 tablespoons avocado oil or any light-tasting oil; use applesauce for oil free

- Using an electric hand mixer, beat together the peanut butter and banana. Whip the eggs in one at a time for about a minute until it gets slightly airy. Whisk in the rest of the ingredients.
- Heat a nonstick pan to medium heat, lightly greased. Add about ⅓ cup of batter (do not spread) and cook for 2-3 minutes, then flip and cook for an additional 1-2 minutes. Serve with your favorite toppings and enjoy!
