I know for most people it's been cool for a while but where I live, it basically feels like summer all year--we're lucky to get a breeze in November! But no matter where you live, this is the time of year to go all-out on all the fall recipes, make pumpkin waffles every morning, and make your whole house smell like cinnamon.🥰
These healthy pumpkin spice waffles are light and fluffy but will keep you full all morning. They're also dairy free and take just about 10 minutes from start to finish!

ingredients in healthy pumpkin spice waffles
- eggs: these are essential for the light fluffiness of these waffles, and prevents them from falling apart.
- pumpkin puree: this is where the pumpkin flavor comes in! You can, of course, make it at home but it's super quick and easy to just buy it in a can. Be sure to get pure pumpkin puree, not pumpkin pie filling!
- oil: these waffles would be dry without it! I use avocado oil but pretty much any oil will work as long as the taste isn't too strong.
- oat milk: my favorite to keep these dairy free, but regular milk works just as well.
- cinnamon/pumpkin pie spice: this is the spice in pumpkin spice! If you want to use just cinnamon that's totally fine, but adding pumpkin pie spice adds a lot of flavor (and makes your kitchen smell amazing). If you don't have any, just use a combination of cloves, ginger, nutmeg, and more cinnamon.
- white whole wheat flour: this flour has more fiber than regular white flour which makes it a great choice for breakfast. White whole wheat is much better than regular wheat, in terms of taste. It's much lighter, and has the same nutritional profile!
- white flour: while whole wheat flour has more fiber, white flour significantly helps the texture and makes these waffles light and fluffy.
how to make pumpkin spice waffles
- Preheat your waffle iron and grease with oil.
- In a large bowl, whisk the eggs with the rest of the wet ingredients, then fold in the dry.
- Scoop ⅓ cup of batter into the waffle iron and cook for about 3 minutes (time will vary based on your waffle iron). Repeat until all the batter is used; it should make about 3 waffles.
- Serve with your favorite toppings like butter, maple syrup, berries, etc. and enjoy!
Making these for meal prep? These freeze well and will last, sealed, in the freezer for about 3 months. Or, you can keep them refrigerated for 3-4 days. Microwave to reheat and enjoy!

These pumpkin waffles taste amazing as pancakes--so no, you do not need to have a waffle iron! Just make the same batter but cook on a pan instead, 2-3 minutes on each side.
can I swap the whole wheat and white flour?
While this isn't always the case, for this particular recipe you can absolutely swap the two flours. I like a mix of both but you can use only whole wheat for more fiber, or only white flour for more fluffiness.
how can I make these gluten free?
Delicious waffles can be made with almond flour, however I have not tried it with this particular recipe so attempt at your own risk. If you want a tried and true gluten free waffle recipe, I recommend this one--just cook it in a waffle iron instead of in the oven.
