This couscous salad is so quick and easy to throw together, but has all the flavor! It's made with healthy ingredients and makes for the perfect appetizer, side dish, or even the main course!
When I say easy, I really mean easy. There's almost no coooking--just the couscous--and the rest is so simple to prepare!
This dish was meant as a side or an appetizer, but I ended up eating a dinner-sized portion. It works either way!
I love these kind of meals for summer because they're fresh, easy and quick to throw together, and leave you satisfied.
It's also customizeable; if you want to add or take away an ingredient, go right ahead! Anything works!

Ingredients
Couscous
- 1 ⅓ cup dry pearl couscous
- 1 ¾ cup vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon salt depending on how salty the broth is
Salad
- 2 large tomatoes
- 2 mini cucumbers
- ¾ cup crumbled feta
- ¼ cup fresh parsley
Dressing
- 1 tablespoon olive oil
- 2 tablespoons honey to taste
- ¼ cup lemon juice
- ½ teaspoon salt
- ½ teaspoon pepper
Instructions
Couscous
- In a medium pot, bring the broth, oil, and salt to a boil. Add the couscous and cook according to package directions. Let it cool before assembling the salad.
Dressing
- In a small bowl, whisk together all the dressing ingredients.
Salad
- In a large bowl, combine the cooked couscous, tomatoes, cucumbers, parsley, and feta. Pour the dressing on top and mix, or serve dressing individually.
