These Matcha Almond Cookies are so delicious and crispy, and so easy to make! Only one bowl and 15 minutes are needed to make healthy cookies that are vegan, gluten free, grain free, paleo, flourless, and oil free!
There are so many flavor combos that I say are "the best" but matcha and almond is one that I've been obsessed with lately.
It started with these Gluten Free Matcha Pancakes that are made from almond flour, and now these Vegan Matcha Almond Cookies!
I'm also mind-blown at how easy these are to make. Literally just throw everything in a bowl. shape and bake!
I don't do a lot of one-bowl recipes, and I get surprised every time because they're so simple.
These cookies are also gluten free, grain free, paleo, oil free, and flourless! They're super crispy, even with no butter, and sweet without refined sugar!🎉
Matcha and Almond Flavors
Matcha and almond will always be one of the best flavor combos to me. I'm very indecisive, so don't ask me what the best combination is. 😂
Matcha
One thing I want to bring to your attention is the matcha powder you use. The powder you buy may be called green tea powder or matcha; they're the same thing.
But please make sure you are not using a drink mix! Matcha is often consumed as tea, or as a sweetened beverage. While this sweet drink is delicious, it's full of added sugar and not what we're looking for here.🙅♀️
For this recipe, make sure you are using pure matcha powder, with that as the only ingredient.
Almond
There are actually many almond sources in this recipe!
Almond Butter: this stuff is seriously amazing. It acts as the butter in the recipe but with healthy fats, protein, and no dairy! Make sure to use the natural kind, which is more drippy/runny than the kind with added oils or preservatives.
Almond Flour: it's just ground up almonds, and acts as the flour in the recipe. It's low in carbs, high in healthy fats and protein, and adds a subtle almond flavor.
Make sure to buy it blanched and finely ground (and not almond meal!) I would not recommend making your own because it's really hard to get the right consistency.
Almond Milk: you don't have to use almond milk; use any kind of milk you have! It's a really small amount and won't make much difference.
Sliced Almonds: a super cute, crunchy, and tasty topping! This is totally optional, but recommended.😉
Ingredients in Vegan Matcha Almond Cookies
So we talked about the almonds and the matcha, but there are still a few more ingredients left!
Maple Syrup: Maple syrup is a natural, unrefined sugar substitute that is vegan and paleo friendly. It sweetens just as well as regular sugar but with more antioxidants, vitamins, and minerals.
Avocado oil: wait what? I thought you said it was oil free? It is! The oil in here is completely optional; just replace it with more almond milk. It's only 1 tablespoon, so it's not a huge deal, but it adds a bit of moisture. You can also replace it with olive oil.
Vanilla extract and salt: it may seem like a small amount, but these two ingredients really make a difference! You won't necessarily taste their flavor, but it will enhance the flavor of the other ingredients.
Important: If your almond butter is salted, you do NOT need to add more salt! Only use the salt if your nut butter is unsalted.
Baking powder: it won't make your cookies puffy or rise, but it gives them just the right texture. Believe me, if you don't use it then you will have dense, hard rocks, not crispy cookies.

How to Store Matcha Almond Cookies
These cookies should stay fine at room temperature in an airtight container for 3-4 days, but you can also keep it in the freezer for a few weeks to a month.
If you freeze, you can thaw it in an airtight container or inside your oven overnight. Usually I defrost things in the microwave, but these cookies may turn soggy if you do.
To be honest, these cookies don't last long enough for me to store anyway, but the options are always there!😂

Vegan Matcha Almond Cookies
Ingredients
- 2 cups blanched almond flour fine
- ⅓ cup pure maple syrup
- ¼ cup natural almond butter
- ¼ teaspoon salt unless nut butter is salted
- 2 teaspoons vanilla extract
- ½ teaspoon baking powder
- 1 ½ tablespoons matcha/green tea powder no sugar added
- 1 tablespoon almond milk or other milk
- 1 tablespoon almond milk or olive/avocado oil use milk for oil-free
- sliced almonds to top
Instructions
- Preheat oven to 350 degrees Fahrenheit. Line a baking tray with parchment paper and set aside.
- In a large bowl, combine all the ingredients with a spatula. Scoop 1-2 tablespoons of batter and roll it into a ball. Press down to form a cookie shape, as thin as desired and place on the prepared tray. Press sliced almond on top and bake for 10-12 minutes.
- Let cool for a few minutes, then enjoy!
