These healthy vegan berry galettes are simple and extremely versatile. They've got a sweet crust, tart filling, and pair perfectly with a scoop of vanilla ice cream.
A fruity, tart, and sweet dessert that's easier than pie, because let's be honest, pie isn't as easy to make as people make it seem.
This recipe only takes 15 minutes to prepare--it's really that simple! The crust requires no chilling because it has no butter (and yes, it's also completely dairy free and vegan)!
This berry galette is perfect for summer, but enjoyable year-round. It's fall at the time that I'm writing this, but I'm seriously craving this dessert right now.
But hey, who's to say you can't swap the berries for some apple and make it fall-themed? Use whatever kind of fruits you like; this galette is super versatile!

the crust
- white whole wheat flour: this flour has more fiber than white flour, and also a lighter taste and texture compared to whole wheat flour!
- all purpose flour: you will, however, need to combine the white whole wheat flour with all purpose flour. Using only whole wheat flour won't result in the best taste or texture, so this balances it out.
- flaxseed meal: totally optional, but it adds additional fiber, protein, and healthy fats!
- avocado oil: this is the butter substitute, since the recipe is vegan! Yes, you can make an amazing crust without butter. 🙂
- cold water: adds a little more liquid, and prevents the crust from getting too warm and loose, especially since there is no chilling involved!
- sugar: I use cane sugar but any granulated sweetener works! This is important because the berries are pretty tart, so the crust needs to balance out the sweetness.

- frozen mixed berries: mixed is best when you can't choose a flavor! But if you have a preference, you can use any type of berries you like.
- cornstarch: berries release a lot of liquid, especially when frozen! Cornstarch helps to bind everything together, and thicken the filling.
- sugar: another balance to the sourness of berries!

- Mix together the oil, water, salt and sugar, then fold in the flour and flaxseed meal until it becomes a dough. Keep refrigerated until the filling is done.
2. Preheat oven to 375 degrees Fahrenheit.

- In a large bowl, mix the filling ingredients together.
2. Divide the crust into 3 equal sections and roll each out in a circle. Fill each with a little over a cup of filling (try to avoid excess liquid) and fold the edges over.
3. Mix together the avocado oil and milk to spread over the crust, then sprinkle sugar on top. Bake for about 40 minutes, top with ice cream, and enjoy!
