Perfectly sweet, moist, and fluffy muffins with no oil, butter, refined sugar or refined flour!
Muffins are my comfort food. Along with chocolate and cake and cookies (especially these Healthy Chocolate Chip Oat Cookies
!)...so yeah basically all desserts but that's besides the point!😂
These muffins are so fluffy and moist (I will never eat a dry muffin) yet they are made from whole wheat flour and no butter or oil.
I use oil in a lot of my recipes, so I was a bit nervous about making an oil-free muffin. However, I found the perfect swaps, which are both very nutritious!
The first is unsweetened applesauce. Made from purely apples, unsweetened applesauce is sweet with natural sugars and has a lot of moisture and no fat, which is perfect for these muffins! It also contains all the nutrients from full apples such as vitamin C, riboflavin, vitamin B-6, and other micronutrients!
The other healthy non-fat moistener is plain greek yogurt. I prefer plain because vanilla yogurt is filled with added sugars, and the applesauce is already sweet enough. Nonfat Greek yogurt also helps achieve perfectly fluffy muffins, while also adding a huge protein boost!
Another classic ingredient to help with fluffiness is eggs. I know it seems pretty obvious, but seriously. These muffins are not the same without them. 😉
So how do you make healthy muffins sweet without making them full of sugar?
The answer is pure maple syrup. First of all, do not get an imitation because they are not natural. Pure maple syrup is unrefined and actually contains quite a bit of vitamins and minerals such as calcium, potassium, iron, zinc, and manganese.
Although it is all natural sugar, keep in mind that it is still sugar and should be consumed in moderation. This is why I only use ¼ cup in the entire batch of 30 muffins. But don't worry! They will still be plenty sweet because of the applesauce! 😉
This recipe is quick and easy to make with just a few steps and only takes a few minutes of prep time.
- Take out the chocolate chips at the beginning so you can snack on them while you're cooking*
- Combine dry ingredients and wet ingredients in separate bowls
- Add the dry ingredients to the wet
- Pour batter into mini muffin tins
- Bake and cool
*just kidding do NOT be like me and eat too many chocolate chips while you're prepping 🤣 take them out right before adding to avoid snacking!
