Unpopular opinion: pasta is overrated, sorry. It's great, don't get me wrong, but I've been looking for an alternative because it can get a little boring.
Yes, orzo is pasta, but it has a completely different feel! It's like the best of rice and the best of pasta, but one food. It's the perfect base for a salad, especially if leaves aren't your thing.
This was seriously the best lunch I've had in a long time. It's fresh but still has that comfort element to it, from the feta and pasta. It's also got some decent protein from the edamame!

We'll start with the base of this recipe: orzo! I tried it for the first time pretty recently and immediately fell in love with it.
In case you're not familiar, orzo is a type of pasta that is shaped like rice. It's not a difference of taste but there is definitely a difference in texture! The small shape also makes it great for adding to salad.
Next is the edamame. It's high in protein and so tasty! You can get them prepackaged or boil and peel them (the fresh ones do tend to be better but either works)!
Same with corn--fresh is best but I did use canned corn here and it was still great.
I also added spinach for some extra greens, but it's totally optional. Some other add-ins to consider are cucumber, chicken, nuts, or anything else you like in your salads!
Make the dressing with olive oil, lemon juice, salt, and garlic powder, then top with feta cheese and you've got yourself a refreshing and comforting pasta salad!

Ingredients
- 1 cup raw orzo
- 1 cup cooked and peeled edamame
- 1 cup cooked/canned corn
- cooked spinach, optional
- feta cheese, to top

- 2 tablespoons olive oil
- ½ lemon, juice of

Instructions
- In a medium pot, boil water and cook orzo according to package directions. Mix in the edamame, corn, and spinach. Mix together the dressing ingredients and pour over, then top with feta cheese.
