This oat cereal is a nutritious way to start your day, and is made completely from scratch! There are no bananas involved and just a few simple ingredients for this healthy, vegan, and gluten free breakfast.
Cereal is one of my favorite lazy breakfasts, but unfortunately not super nutritious. I still enjoy packaged cereal from time to time, but if you're up for a little more effort, try this homemade oat cereal!
It's honestly not too much work at all, the most time-consuming part is rolling into balls and that's 5 minutes max. Plus, these will fuel your morning and keep you full until lunch with slow-releasing carbs from oats. 🙂

- unsweetened applesauce: every time I make a baked oatmeal recipe, people ask me what they can use instead of banana. And to be honest, I'm not a big fan of bananas either. So, I decided that this recipe would use applesauce instead--and it works just as well!
- oil: I always use avocado oil because of it's neutral taste and omega-3's, but any neutral-tasting oil works!
- maple syrup: this is the primary sweetener, since there is no banana. Feel free to sub with any other liquid sweetener!
- flaxseed meal: this one is optional, but I highly recommend for it's protein, healthy fat, and fiber content.
- oat flour: oat flour is just blended rolled oats, so if you don't have any it's easy to make at home! Oats are the base for this recipe and make the cereal super nutritious.
how to make vegan & gluten free cereal
- Preheat oven to 350 degrees Fahrenheit and line a baking tray with parchment paper. Set aside.
- In a small bowl, mix all the ingredients together. Scoop 1 teaspoon of the dough and roll into a ball. You may want to do ½ teaspoon if you like them smaller, but keep in mind that this will take longer.
- Place on the prepared tray and bake for about 8 minutes, until they have slightly browned on top and are crispy. Serve with milk and enjoy!
These are best fresh, as they will soften by the next day.
flavor variations
This recipe is for plain oat cereal, and it honestly tastes great alone! However, you can try the following additions if you want to spice it up a bit:
- chocolate chips
- vanilla extract + sprinkles
- cinnamon sugar
- dried or freeze-dried fruit
- matcha powder
