Gingerbread has always been my favorite holiday flavor, but this year I decided to expand it's recipes to more than just cookies. Enter: Healthy Gingerbread Muffins, my new favorite holiday dessert!
They're fluffy, moist, and taste exactly like gingerbread cookies! But best of all, they take less than 30 minutes and just one bowl to prepare. So when your family eats them all in an hour (like mine did) you can quickly whip up another batch.😅
These muffins are made with nutritious ingredients so they are more filling and satisfying than traditional muffins. They're also dairy free, and can be made gluten and grain free.

ingredients in healthy gingerbread muffins
- eggs: a key ingredient in many muffin recipes--these are very important in keeping the muffin structure and helping it rise.
- almond flour: this is the main flour for this recipe. It's gluten and grain free, made purely from almonds! This makes it high in fiber and protein. Make sure to get fine, blanched almond flour for best results.
- flour: I used white (all purpose) flour, but whole wheat is a good option as well! Regular wheat flour helps the texture to be light and fluffy, but you can substitute this with more almond flour if you need these to be gluten or grain free. Just note it will be a little more dense and moist!
- flaxseed meal: another binding agent that happens to pack in tons of nutrients! Flaxseed meal is high in fiber, protein, and healthy fats, and you can't even taste it.
- applesauce: it's a fairly small amount, but makes these a little more moist than using milk alone.
- molasses: adds sweetness, but is also a key for that classic gingerbread flavor!
- sugar: just 2 tablespoons to help out the molasses and bring all the flavors through.
- avocado oil: this is suuuper important for moist muffins. Oil-free baked goods just aren't the same! I like avocado oil for it's neutral taste and omega-3s, but other neutral oils like canola/vegetable, coconut, or sunflower are good options as well.
- oat milk: oat milk is my favorite dairy-free milk, but really anything works here! You can also use dairy milk if you don't need this to be dairy free.
- cinnamon, ginger, and cloves: these are the spices that make these muffins taste like gingerbread! Feel free to switch up the amounts or ratios to your liking.

It's just 3 simple steps:
- Preheat oven to 350 degrees Fahrenheit and line a muffin tray with paper or silicone liners. Set aside.
- In a large bowl, whisk the eggs until uniform. Whisk in the rest of the ingredients and mix until just combined.
- Fill each liner to about ¾ full and bake for 15 minutes. Enjoy!

can I make these gluten free?
You can replace the wheat flour with more almond flour--the texture will be less fluffy and a little more dense, but you will still get tasty muffins!
how do you store these muffins?
You can keep them in an airtight container at room temperature for one day, then move to the fridge (5 days) or freezer (1 month). If frozen, leave at room temperature overnight or microwave for 1 minute.
