I really can't choose most of the time. Right now I'm leaning more towards brownies, but a few weeks ago I probably would have chosen cookies.😅
But hey, these almond flour brownie cookies are the best of both worlds! It's crispy, chewy, rich, and sweet. Plus, they're vegan, gluten free, paleo, and healthy!
I love the cute heart shape but that's totally optional. You can get creative with the shapes or even use a cup to cut them out. 🙂

The ingredients in this recipe are different from those in most brownies or cookies, but it's nothing crazy! They make these cookies as good as they are.
for the cookies:
- almond flour: this is the base for the cookies, instead of regular wheat flour. Not only does this make the recipe gluten free and grain free, but it also really helps with the texture! Fine, blanched almond flour is what gives these cookies their crispiness and chewiness. Be sure not to get almond meal, they are not the same!
- coconut flour: this works alongside the almond flour for the best possible texture. You can't taste the coconut but it just acts as an extra binder so the cookies stay together.
- maple syrup: this is what makes the cookies sweet! It also acts as a wet ingredient, so granulated sugar wouldn't work here.
- avocado oil: oil is the best way to prevent your cookies from drying out. There is nothing quite like oil when it comes to moisture! You can use any neutral-tasting oil but I love avocado for it's omega-3s.
- nut butter: this is the other component of the moisture, as well as one of the binding ingredients. It's also high in protein, healthy fats, and fiber so you really can't go wrong with it. I used almond, but you can also use cashew or any kind that doesn't have a strong taste. I wouldn't recommend peanut butter for this reason.
for the brownies:
- flax egg: this is a vegan egg substitute, that's really nothing like an egg at all except that it binds ingredients together. You just need 1 tablespoon of finely ground flaxseed meal and 3 tablespoons of water. I know, it looks strange but just trust me with this one. 🙂
- granulated sweetener: cane sugar is my go-to. Unlike the cookies, you actually need a granulated sweetener for the brownies, not liquid!
- cocoa powder: for the chocolate flavor of course! I use regular cocoa powder, not dutch-processed so I wouldn't suggest swapping.
- melted chocolate: there's a richness in chocolate flavor that's hard to achieve without real melted chocolate! Be sure to use a dairy free kind if you need this to be vegan.
- the rest of the ingredients are repeated ones from the cookies!
how to make almond flour brownie cookies
- In a medium bowl, combine all the cookie ingredients: almond flour, coconut flour, salt, maple syrup, avocado oil, nut butter, and baking powder. Mix until a dough forms and set aside.
2. In a separate bowl, make the flax egg by combining 1 tbsp flaxseed meal and 3 tbsp water. Mix and rest for 10 minutes until it gels. Then add in the rest of the ingredients: nut butter, sugar, oil, vanilla, cocoa powder, coconut flour, baking soda, salt, and melted chocolate.
3. Roll out each dough separately. Cut the cookies out in circles using a cookie cutter or a cup. Then cut a hole in the center using a smaller circle, or another shape (I used a heart). Use this same smaller cutter to cut the brownie dough. Place the brownie dough in the hole of the cookies and repeat until all the cookies are cut out.
4. Bake at 350 degrees Fahrenheit for 10-15 minutes and enjoy!
