    I was definitely getting major quarantine vibes while making this recipe. I mean, technically we are still quarantining, but things have changed since then and pancake cereal is no longer trending :/ It just goes to show you that trends come and go, but the recipe will always be just as good, and in this case better!

    Ok I'll be honest. I tried pancake cereal *once* in quarantine and basically gave up after that. Yeah, it was delicious, but so much work to flip each and every one of those pancakesπŸ₯΅. Even just regular pancakes are super time consuming because I cook them one at a time, so I've been baking them in the oven and it's so much easier!

    This recipe could not be simpler. Just mix together the ingredients, pipe on a tray, and bake. No flipping necessary🀯. It's also healthy, gluten free, and paleo!

    But of course, the best part is that it tastes so freaking amazing!! I have to say, this even beats cheerios...my favorite cereal ever (my friends think that's super weird...don't judge me for being basic😣). I am definitely a huge cereal fan and have tried so many varieties, but pancake cereal is just another level.

    How to Make Gluten Free Pancakes

    Almost all my pancake recipes use the same type of flour: almond flour! This is probably my favorite flour to use out of all the gluten free substitutes for a few reasons.

    For one, it's super nutrient-dense! This is my favorite thing to look for in any food. Almond flour is high in fiber, protein, and healthy fats (just like almonds!), as well as quite a few vitamins and minerals.

    This is great because 1) you're getting a ton of health benefits from your breakfast, and 2) it makes the meal wayyy more satisfying and filling!

    I've actually made this base pancake recipe multiple times, and a few times I tried using regular all-purpose flour instead of almond flour, just to see if it will taste better.

    To be honest...I like almond flour way better! I know we all have different opinions, but with all-purpose I noticed it tends to be more dry, less satisfying, and...yeah just the dryness really threw me off and made it harder to eat. But if you like all-purpose flour, no problem! You can use it here if you're not gluten sensitive.

    So what's almond flour made of, and why is it gluten free? Well, almond flour is literally ground up almonds, so naturally it would have no gluten! Technically it's not even a flour, we just call it that since it acts like it. I could even call this a flourless recipe!

    One thing to take note of though: just because almond flour is ground up almonds does not mean you can make it at home like oat flour. You would have to be very precise--if you don't grind it enough, you'll end up with a lot of chunks, and if you grind it too much you'll get almond butter. It's a very fine line, and so much easier to just buy a bag at a store.

    If you can't find any in stores, just click here to get it on amazon! This is my favorite brand; you get a great price for a great value. I seriously use it allll the time (search "almond flour" on my site if you need some inspo!) so it's not a one-time thing.

    And lastly, I want to make it clear that you should be using blanched almond flour, and not almond meal. Almond meal still has the skin on and the texture will not be pleasant!

    Ingredients in Almond Flour Pancake Cereal

    Besides the almond flour, there are other ingredients & swaps here that make this recipe healthy, delicious, and satisfying.

    First is the eggs! One of my favorite ingredients for pancakes. These bind the batter together, add flavor and richness, and make them fluffy! Not to mention extra protein and nutrients🀩

    A lot of you have asked me for a vegan pancake recipe, and yes I'm working on it! But for now, eggs it is πŸ™‚

    This recipe isn't vegan because of the eggs, but it is dairy free. There's no butter and no milk; we're using oat milk here! Well, I used oat milk, but you can use whatever plant-based milk you like. Almond, coconut, soy, etc., they all work! I just recommend oat milk because it's my favorite.

    And for a butter replacement, it's avocado oil πŸ™‚ This is my favorite oil to use because it's full of healthy unsaturated fats, omega-3 fatty acids, and isn't chemically processed like vegetable oils are! It also has a neutral taste unlike olive oil.

    This is my favorite brand of avocado oil, because again, great price for the value! And honestly, this is one of the most-used ingredients on my blog; I love it so much.

    That being said, you can definitely use any neutral oil you like, such as refined coconut oil, light-tasting olive, or sunflower oil. Anything is fine as long as it doesn't have a strong flavor.

    Maple syrup is the sweetener used here, because it's natural, high in antioxidants, and tasty! There are plenty of other subs for this, which I will go over in the next section.

    Ingredient Substitutions

    I can't just assume you have all the ingredients this recipe calls for, so here are some subs! The recipe is the recipe for a reason, and you will get the best results this way, however it will still work out if you don't have everything πŸ™‚

    Almond Flour: feel free to try all-purpose flour if you're fine with gluten, but as I said earlier it can get dry. I think gluten free all-purpose flour could work too!

    Avocado oil: any neutral oil, such as coconut, sunflower, or canola.

    Maple syrup: since it's such a small amount, a swap won't make much of a difference. Honestly just use whatever sugar you want, like cane, coconut, honey, agave, etc.!

    How to Make Pancake Cereal

    This recipe could not be simpler! Here are the steps:

    1.Mix all the ingredients together

    2. Fill the batter in a bag

    3. Pipe the batter on a tray--I did them in heart shapes but it would definitely be easier to just pipe regular circles.

    4. bake!

    5. eat with milk and berries and enjoy!!

    Ingredients
      

    • 2 eggs
    • 2 tablespoons avocado oil
    • 1 tablespoon maple syrup
    • 2 tablespoons oat milk or any milk
    • 1 teaspoon vanilla extract
    • 1 cup fine, blanched almond flour
    • ΒΌ teaspoon salt
    • Β½ teaspoon baking soda
    • Β½ teaspoon baking powder

    Instructions
     

    • Preheat oven to 350 degrees Fahrenheit.
    • In a medium bowl, whisk the eggs until slightly fluffy. Add in the avocado oil, maple syrup, oat milk, and vanilla extract and mix to combine. Then mix in the dry ingredients: almond flour, salt, baking soda and baking powder.
    • Transfer the batter into a bag and cut a small slit at the tip. Pipe onto a tray lined with parchment paper and bake for about 5 minutes, more or less depending on your oven. Serve with milk and enjoy!!
