Healthy Turkey + Sweet Potato Chili

Ingredients
  

  • 1 medium white onion
  • 1 lb ground turkey
  • 3 small sweet potatoes about 3 cups
  • 2 tablespoons olive oil
  • 3 cups crushed or strained tomatoes from a box or can
  • ½ cup vegetable or chicken broth
  • ½ cup low fat or nonfat milk
  • 1 15 oz can black beans drained and rinsed
  • 1 cup frozen, canned, or fresh corn
  • ½ - 1 cup cheddar cheese
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 ½ teaspoons cumin I used roasted
  • 1 tablespoon garlic herb seasoning
  • 2 tablespoon chili powder or more if you like it spicier
  • ½ teaspoon red pepper flakes
  • 1 teaspoon sweet paprika
  • ¼ teaspoon cinnamon
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder

  • tortilla chips

Instructions
 

  • In a medium pot, heat oil on high heat. Add onions and cook for about 2 minutes, until translucent. Add the turkey and break it up while combining with onions. Cook for an additional 2-3 minutes. Add the sweet potato and toss with the onions and turkey. Stir in all the spices: salt, pepper, garlic herb seasoning, cumin, chili powder, red pepper flakes, paprika, cinnamon, onion powder, and garlic powder.
  • Pour in the milk, broth, and tomato and bring to a simmer. Cover and cook for 20 minutes.
  • Add in the beans and corn and simmer, covered, for an additional 5-10 minutes until the chili is thick and the sweet potatoes are fork-tender.
  • Turn off the heat and stir in the cheddar. Optional: top with avocado, lime, and cilantro and extra cheese. Serve with tortilla chips.
