Ingredients
Couscous
1 ⅓cupdry pearl couscous
1 ¾cupvegetable broth
1tablespoonolive oil
1teaspoonsaltdepending on how salty the broth is
Salad
2largetomatoes
2minicucumbers
¾cupcrumbled feta
¼cupfresh parsley
Dressing
1tablespoonolive oil
2tablespoonshoneyto taste
¼cuplemon juice
½teaspoonsalt
½teaspoonpepper
Instructions
Couscous
In a medium pot, bring the broth, oil, and salt to a boil. Add the couscous and cook according to package directions. Let it cool before assembling the salad.
Dressing
In a small bowl, whisk together all the dressing ingredients.
Salad
In a large bowl, combine the cooked couscous, tomatoes, cucumbers, parsley, and feta. Pour the dressing on top and mix, or serve dressing individually.
