Ingredients
  

Couscous

  • 1 ⅓ cup dry pearl couscous
  • 1 ¾ cup vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt depending on how salty the broth is

Salad

  • 2 large tomatoes
  • 2 mini cucumbers
  • ¾ cup crumbled feta
  • ¼ cup fresh parsley

Dressing

  • 1 tablespoon olive oil
  • 2 tablespoons honey to taste
  • ¼ cup lemon juice
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions
 

Couscous

  • In a medium pot, bring the broth, oil, and salt to a boil. Add the couscous and cook according to package directions. Let it cool before assembling the salad.

Dressing

  • In a small bowl, whisk together all the dressing ingredients.

Salad

  • In a large bowl, combine the cooked couscous, tomatoes, cucumbers, parsley, and feta. Pour the dressing on top and mix, or serve dressing individually.
