Healthy Vegan Strawberry Crisp
This healthy strawberry crisp is super easy to make, and so delicious! It's gluten free, vegan, and refined sugar free, and the perfect treat for summer.

- 5 cups halved strawberries fresh or frozen*
- 2 tablespoons cornstarch
- 3 tablespoons coconut sugar*
- 1 teaspoon lemon juice
- 1 cup + 2 tbsp rolled oats gluten free
- ¾ cup + 2 tbsp almond flour blanched
- 5 tablespoons maple syrup
- ¼ teaspoon baking powder
- ¼ teaspoon salt
- 4 tablespoons avocado oil or light olive oil
- 1 tablespoon flaxseed meal finely ground
Preheat oven to 350 degrees Fahrenheit and grease an 8"x 8" baking pan. Set aside.
In a medium bowl, combine the strawberries, cornstarch, lemon juice, and sugar. Transfer to the prepared pan.
In a separate bowl, combine the oats, almond flour, maple syrup, baking powder, salt, oil, and flaxseed. Evenly distribute the mixture on top of the strawberries. Bake for 30 minutes.
*STRAWBERRIES: Fresh or frozen strawberries work, but if you use frozen make sure to defrost and drain excess water first, before measuring.
*COCONUT SUGAR: can substitute brown sugar or cane sugar.
