Vegan Matcha Almond Cookies
These Matcha Almond Cookies are so delicious and crispy, and so easy to make! Only one bowl and 15 minutes are needed to make healthy cookies that are vegan, gluten free, grain free, paleo, flourless, and oil free!

- 2 cups blanched almond flour fine
- ⅓ cup pure maple syrup
- ¼ cup natural almond butter
- ¼ teaspoon salt unless nut butter is salted
- 2 teaspoons vanilla extract
- ½ teaspoon baking powder
- 1 ½ tablespoons matcha/green tea powder no sugar added
- 1 tablespoon almond milk or other milk
- 1 tablespoon almond milk or olive/avocado oil use milk for oil-free
- sliced almonds to top
Preheat oven to 350 degrees Fahrenheit. Line a baking tray with parchment paper and set aside.
In a large bowl, combine all the ingredients with a spatula. Scoop 1-2 tablespoons of batter and roll it into a ball. Press down to form a cookie shape, as thin as desired and place on the prepared tray. Press sliced almond on top and bake for 10-12 minutes.
Let cool for a few minutes, then enjoy!
