Japanese Soboro Don (Eggs, Turkey, and Rice)
This sweet and savory Japanese dish is super easy to make and so delicious! It's comprised of eggs, turkey, and rice, with a few swaps to make it healthier.

Turkey
- ½ lb ground turkey 90-95% fat free
- 1 tablespoon low sodium soy sauce
- 1-2 teaspoons mirin
- 1-2 teaspoons sake
- ½ teaspoon ginger
- 2 teaspoons sugar
- ½ tablespoon olive oil
Eggs
- 4 large eggs
- 1 tablespoon low sodium soy sauce
- 2 teaspoons mirin
- 1 tablespoon sugar
- ½ tablespoon olive oil
To Serve
- ½ cup brown rice or white
- green onion optional
- arugula optional
Turkey
In a medium nonstick pan, heat up the olive oil on high heat. Add the ground turkey with the soy sauce, mirin, sake, ginger, and sugar. Cook for about 5 minutes while breaking apart into small bits. Remove from pan and drain excess liquid.
Eggs
In a small bowl, whisk together the eggs, soy sauce, mirin, sugar. Heat the same pan with oil on medium high and cook and scramble for about 1-2 minutes, until cooked through.
Serve
Put the brown rice at the bottom of a bowl, then place the turkey and eggs on top. Top with green onions, arugula, or other greens.
