Easy Cheesy Roasted Vegetables

Perfect as a side dish, appetizer or healthy snack and requires almost no preparation!

Ingredients
  

  • 1 ½ cups gold potatoes chopped into small cubes
  • 1 ½ cups broccoli florets
  • 1 cup green beans
  • ½ cup sliced red peppers
  • 2 tablespoons olive oil
  • 2 tablespoons panko breadcrumbs
  • 2 tablespoons Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • Optional extra seasoning recommended:
  • ⅛-1/4 teaspoon Italian seasoning
  • ⅛-1/4 teaspoon onion powder
  • ¼ teaspoon garlic herb seasoning

Instructions
 

  • Preheat oven to 400 degrees Fahrenheit. Line a baking tray with aluminum foil.
  • In a medium bowl, combine all ingredients with hands.
  • Spread the mixture on the prepared tray and bake for 20 minutes.
