Easy Cheesy Roasted Vegetables
Perfect as a side dish, appetizer or healthy snack and requires almost no preparation!

- 1 ½ cups gold potatoes chopped into small cubes
- 1 ½ cups broccoli florets
- 1 cup green beans
- ½ cup sliced red peppers
- 2 tablespoons olive oil
- 2 tablespoons panko breadcrumbs
- 2 tablespoons Parmesan cheese
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- Optional extra seasoning recommended:
- ⅛-1/4 teaspoon Italian seasoning
- ⅛-1/4 teaspoon onion powder
- ¼ teaspoon garlic herb seasoning
Preheat oven to 400 degrees Fahrenheit. Line a baking tray with aluminum foil.
In a medium bowl, combine all ingredients with hands.
Spread the mixture on the prepared tray and bake for 20 minutes.
