Chocolate Chip Oat Cookies

Ingredients
  

  • 2 tablespoons chia seeds
  • 6 tablespoons water
  • ¼ cup unsweetened applesauce
  • 2 tablespoons avocado oil
  • ¼ cup pure cane sugar
  • ¼ cup pure maple syrup
  • 1 teaspoon pure vanilla extract optional
  • 1 ½ cup gluten free rolled oats
  • 1 cup gluten free oat flour blended oats
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup vegan chocolate chips

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit. Prepare a baking sheet with a silicone mat, parchment paper, or oil spray. Set aside.
  • Mix the chia seeds with water and set aside to rest for 5-10 minutes.
  • In a medium bowl, sift oat flour, oats, baking soda, baking powder, and salt with the oats and whisk to combine.
  • In a large bowl, whisk together the chia seed mixture, applesauce, avocado oil, sugar, vanilla extract, and honey.
  • Fold the dry ingredients into the wet ingredients and add the chocolate chips, or any additional toppings you want.
  • Scoop about a tablespoon of batter on your prepared baking sheet, or use a cookie scoop. Flatten the cookies in a circle using a spoon.
  • Bake for 10 minutes. After taking them out of the oven, let them sit for a few minutes and then transfer to a cooling rack.

Storing information:
Store in an airtight container in the fridge for up to a week or seal in a plastic bag in the freezer for up to a month.
