Healthy Oatmeal Cinnamon Toast Crunch [Vegan, Gluten Free]
You can think of this as a sweet, nostalgic way to eat baked oats, or as a healthier version of cinnamon toast crunch that won’t give you a sugar crash. Either way, it makes an amazing breakfast, and one that will keep you full for much longer than ordinary cereal.
- 2 tablespoons unsweetened applesauce
- 2 tablespoons oil
- 1 tablespoon maple syrup
- 1 teaspoon flaxseed meal finely ground
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ¾ cup + 2 tablespoons oat flour (blended rolled oats)
- 1 tablespoon coconut or cane sugar
- 1 teaspoon cinnamon
Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper. Set aside.
In a medium bowl, combine the applesauce, oil, maple syrup, flaxseed meal, baking powder, salt, and oat flour and mix to form a dough.
Roll out the dough in a rectangular shape and brush on a teaspoon more oil, plus the sugar and cinnamon.
Cut into little squares and bake for about 10 minutes. Serve with milk and enjoy!
