This healthy chocolate chip cookie skillet is easy to make and so delicious. It's basically a soft, gooey, giant chocolate chip cookie that's great for sharing with friends and family. It's also completely vegan and gluten free!

Ingredients
  

  • 1 tablespoon finely ground flaxseed meal
  • 2 tablespoons water
  • ½ cup unsweetened applesauce
  • cup nut butter I used almond
  • 2 tablespoons oil
  • ¼ cup maple syrup
  • cup granulated sweetener of choice
  • 1 tablespoon oat milk or other nondairy milk
  • 1 teaspoon vanilla extract
  • 1 ¼ cup oat flour (blended oats)
  • ¾ cup + 2 tablespoons fine, blanched almond flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup dairy free chocolate chips

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit and grease a skillet or 8" cake pan. Set aside.
  • In a large bowl, mix the flaxseed meal and water and sit for 5-10 minutes until it gels. Mix in the wet ingredients: applesauce, nut butter, maple syrup, oil, sugar, milk, and vanilla, Fold in the dry ingredients: oat flour, almond flour, baking soda, baking powder, salt, and chocolate chips. Mix until combined.
  • Transfer to the prepared pan or skillet and bake for 20 minutes. Serve with dairy free ice cream and enjoy!
