Vegan Boba Crepes
These vegan crepes are simple, delicious, and are topped with boba! Enjoy as a dessert for breakfast, or just dessert, with lightened up and higher-nutrient ingredients.

- 2 cups nondairy milk
- 1 ½ tablespoons oil
- 1 ½ tablespoons maple syrup
- 1 teaspoon maple syrup
- ¼ teaspoon salt
- ¼ teaspoon baking powder
- 1 cup white flour
- ¾ cup white whole wheat flour
- ⅓ cup dry tapioca/boba pearls
- 1 tablespoon sugar
In a blender, blend the milk, oil, syrup, vanilla, baking powder, salt, and flour until smooth.
Heat a small/medium nonstick pan to medium heat and lightly coat with oil. Scoop about 2 tablespoons of batter onto the pan, spread it out, and cook for a minute on each side. Repeat until all the batter is used.
Boil the tapioca pearls according to package directions. Turn off the heat, drain, and place on the stove. Add the sugar and mix just until it melts.
Serve the crepes with the boba, and dairy free yogurt or cream, if desired. Enjoy!
