Ingredients
  

  • 2 cups nondairy milk
  • 1 ½ tablespoons oil
  • 1 ½ tablespoons maple syrup
  • 1 teaspoon maple syrup
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder
  • 1 cup white flour
  • ¾ cup white whole wheat flour
  • cup dry tapioca/boba pearls
  • 1 tablespoon sugar

Instructions
 

  • In a blender, blend the milk, oil, syrup, vanilla, baking powder, salt, and flour until smooth.
  • Heat a small/medium nonstick pan to medium heat and lightly coat with oil. Scoop about 2 tablespoons of batter onto the pan, spread it out, and cook for a minute on each side. Repeat until all the batter is used.
  • Boil the tapioca pearls according to package directions. Turn off the heat, drain, and place on the stove. Add the sugar and mix just until it melts.
  • Serve the crepes with the boba, and dairy free yogurt or cream, if desired. Enjoy!
