These pumpkin waffles are super easy to make and will make your whole kitchen smell like pumpkin pie. They’re soft, fluffy, and moist with nutritious ingredients and lots of flavor.

- 2 eggs
- ½ cup pumpkin puree
- 2 tablespoons oil
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- ½ teaspoon pumpkin pie spice optional
- ½ cup all purpose flour can sub whole wheat
- ½ cup white whole wheat flour can sub all purpose
Preheat a waffle iron and spray with oil. In a medium bowl, whisk all the ingredients together and add ⅓ cup of batter to the waffle iron. Cook for about 3 minutes until fully cooked. Top with maple syrup, butter, berries, etc. Enjoy!
