Corn and Edamame Orzo Salad
This fresh orzo salad makes a great lunch or side dish, even for those that don't like salads. The recipe is vegetarian and features corn, edamame, lemon, and feta.

- 1 cup raw orzo
- 1 cup cooked and peeled edamame
- 1 cup cooked/canned corn
- cooked spinach, optional
- feta cheese, to top
dressing
- 2 tablespoons olive oil
- ½ lemon, juice of
- salt to taste
- garlic powder to taste
In a medium pot, boil water and cook orzo according to package directions. Mix in the edamame, corn, and spinach. Mix together the dressing ingredients and pour over, then top with feta cheese.
