Healthy Brownie-Filled Almond Flour Cookies [Vegan, Gluten Free, Paleo]
These brownie-filled cookies are the answer when you can't choose between brownies and cookies. They're healthy, vegan, gluten free, and paleo friendly! The texture is both chewy and crispy, while the taste is rich and sweet.

- 1 ¾ cup fine blanched almond flour
- 2 tablespoons coconut flour
- ¼ teaspoon salt more or less, depending on how salty nut butter is
- ¼ cup maple syrup
- ¼ cup avocado oil
- ¼ cup nut butter of choice I used almond

- 1 flax egg (1 tbsp flaxseed meal + 3 tbsp water, rest 10 min)
- ½ cup nut butter of choice
- ⅓ cup granulated sweetener
- 2 tablespoons avocado oil
- 1 teaspoon vanilla extract
- 3 tablespoons cocoa powder
- 3 tablespoons coconut flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup chocolate chips melted
In a medium bowl, combine all the cookie ingredients: almond flour, coconut flour, salt, maple syrup, avocado oil, nut butter, and baking powder. Mix until a dough forms and set aside.
In a separate bowl, make the flax egg by combining 1 tbsp flaxseed meal and 3 tbsp water. Mix and rest for 10 minutes until it gels. Then add in the rest of the ingredients: nut butter, sugar, oil, vanilla, cocoa powder, coconut flour, baking soda, salt, and melted chocolate.
Roll out each dough separately. Cut the cookies out in circles using a cookie cutter or a cup. Then cut a hole in the center using a smaller circle, or another shape (I used a heart). Use this same smaller cutter to cut the brownie dough. Place the brownie dough in the hole of the cookies and repeat until all the cookies are cut out.
Bake at 350 degrees Fahrenheit for 10-15 minutes and enjoy!
