Gluten Free Baked Almond Flour Pancake Cereal (Healthy, Paleo)
Baking pancake cereal in the oven is so much easier that flipping each on the stove! This kind is healthy, gluten free, and so delicious. It may not be trending anymore, but pancake cereal is really such a great breakfast to wake up to.

- 2 eggs
- 2 tablespoons avocado oil
- 1 tablespoon maple syrup
- 2 tablespoons oat milk or any milk
- 1 teaspoon vanilla extract
- 1 cup fine, blanched almond flour
- ¼ teaspoon salt
- ½ teaspoon baking soda
- ½ teaspoon baking powder
Preheat oven to 350 degrees Fahrenheit.
In a medium bowl, whisk the eggs until slightly fluffy. Add in the avocado oil, maple syrup, oat milk, and vanilla extract and mix to combine. Then mix in the dry ingredients: almond flour, salt, baking soda and baking powder. Transfer the batter into a bag and cut a small slit at the tip. Pipe onto a tray lined with parchment paper and bake for about 5 minutes, more or less depending on your oven. Serve with milk and enjoy!!
