Healthy Flourless Peanut Butter Banana Pancakes (Gluten Free, No Added Sugar)
These healthy pancakes are super fluffy, delicious, and gluten free! They have no flour or added sugar yet are still a satisfying way to start your morning. And of course, you can never go wrong with the peanut butter + banana combo!
- 1 cup natural peanut butter
- 1 tablespoon apple cider vinegar do not omit!
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 3 large eggs
- 2 medium ripe bananas
- 2 tablespoons avocado oil or any light-tasting oil; use applesauce for oil free
Using an electric hand mixer, beat together the peanut butter and banana. Whip the eggs in one at a time for about a minute until it gets slightly airy. Whisk in the rest of the ingredients.
Heat a nonstick pan to medium heat, lightly greased. Add about ⅓ cup of batter (do not spread) and cook for 2-3 minutes, then flip and cook for an additional 1-2 minutes. Serve with your favorite toppings and enjoy!
