Healthy Blueberry Lemon Crumb Bars
These blueberry lemon crumb bars are the perfect dessert for summer--like a cross between a berry pie and crumble! It's made with all healthy ingredients, plus vegan and gluten free!

Crust
- 2 cups blanched almond flour
- ¼ teaspoon salt
- ¼ cup maple syrup
- 3 tablespoons avocado oil
- 4 tablespoons lemon zest
- ¼ teaspoon baking powder
Blueberry Lemon Filling
- 3 cups frozen wild blueberries
- 3 tablespoons lemon juice
- 3 tablespoons lemon zest
- 3 tablespoons coconut sugar
- 2 tablespoons flaxseed meal
- 1 tablespoon cornstarch
Crumb Topping
- ½ cup rolled oats
- 7 tablespoons almond flour
- 3 tablespoons maple syrup
- ¼ teaspoon baking powder
- ¼ teaspoon salt
- 2 tablespoons avocado oil
Crumb Topping
Wash out the bowl or get a new one. Combine all the ingredients for the crumb topping and add it on top of the blueberry filling. Bake for 20-25 minutes, until the filling is fully cooked and the top is golden brown. Cool slightly, then slice and serve!
